We can prepare the Payasam/Rasayana with Jaggery or Sugar depending on your preference. Sugar based Rasayana/Payasam takes less time and effort. Have provided the preparation methods for both types.
Honeydew Melon Payasam/Rasayana, specially the Jaggery based one, can be had with Dosa. Some may like to have it with Chapati as well.

Hayagriva Ingredients:
Bengal Gram Dal or Kadale Bele – 1 cup
Jaggery – 1 cup
Desiccated Coconut or Kobbari or Copra grated – 1/4 cup
Dry dates pieces – 2 tsp
Poppy seeds or Gasgase – 2 tsp
Cashew nuts – 7-8

Cardamom Powder – 1/2 tsp

Ingredients:
Red Pumpkin – 1 small sized
Sugar – 1 and 1/2 cup
Milk – 1/2 ltr
Cashew – 5-6
Cardamom – 1
Kesar strands – 4-5 (optional)

Salt – 1 pinch
Coconut grated – 1/2 cup
Poppy Seeds or Khus-Khus (GasGase) – 1 tsp
